Thanksgiving Sweetness
I’m looking forward to Thanksgiving, spending time with my family and, of course, eating delicious food. Cooking and baking is one of the things that brings my family together for all holidays.
This recipe is one of our favorites. Technically, it’s a Passover recipe, but we use it all year long. We serve this sweet potato pie with our Thanksgiving dinner and not for dessert… because why save sweets just for dessert?

Sweet Potato Pie

Ingredients:
40 oz can sweet potato – drained (3 cups)
¾ cup sugar
½ cup Coffee Rich
1 tsp vanilla
2 eggs
Mix together and put in 8” spring form pan or 8” foil pan.
Topping:
1 cup brown sugar
½ cup cake meal
1 cup chopped pecans
½ stick margarine melted
Mix topping ingredients together. Spread over the potato mixture.
Bake at 400 degrees for 30-40 minutes. If top starts to burn, cover with foil.
